Banana Pancakes

These banana pancakes are a firm favourite of ours on a Sunday morning. Apparently Daddy makes them better – kids know how to hit you where it hurts sometimes don’t they!

Ingredients

  • 2-3 ripe bananas (depending on size)
  • 140g wholemeal self-raising flour (can use 100g self-raising white flour and 40g wholemeal if desired)
  • 1 egg
  • 175mls semi- skimmed milk
  • Butter for frying

 

Method

  • Sieve flour, adding in the wholemeal bits left in the sieve into the bowl too.
  • Measure the milk in a jug, crack an egg into it and beat until they’re mixed together.
  • Pour the egg mixture into the flour and beat until the batter is smooth. If you can rest the batter here for 20 mins or so if will make the pancakes fluffier.
  • Mash the bananas in a separate bowl and set aside.
  • Heat knob of butter in shallow pan. Take one ladle mixture and fry until golden on one side and bubbling at the edges. Flip over and do the same to the other side. You should be able to cook about 3 pancakes at a time.
  • Serve with fresh fruit e.g. strawberries and banana and a drizzle of honey.

 

I adapted this recipe to take out the sugar as my two enjoying adding it in the form of honey themselves. Also works well with a dollop of natural or greek yoghurt.
