Christmas Pudding with NO DRIED FRUIT!
I have developed this recipe for people who can’t digest dried fruit BUT it is also great for all you raisin haters!
Christmas Pudding Recipe
Dried Fruit Free!
2 large Bramley apples, coarsely grated
1 cup glacé cherries roughly chopped (don’t worry about the skins, the processing makes them easily digestible)
3 pieces of ginger in syrup, coarsely chopped
¾ cup sweet sherry
1 cup plain flour
1 cup ground almonds or breadcrumbs
14 tablespoons of shredded suet
¾ cup dark brown soft sugar
2 teaspoons of ground cinnamon
¼ teaspoon of ground cloves
1 teaspoon of baking powder
1 lemon, tested finely
2 tablespoons of black treacle
½ cup of brandy for lighting
To the grated apple and chopped ginger and cherries add the sherry, mix and set aside. You can leave this overnight to soak completely if you prefer, but this is not absolutely necessary.
In another big bowl, add all the other ingredients and mix to a paste.
Add the apple mix and stir to combine into a moist batter.
Grease a large pudding basin, pour in the mixture and seal carefully. Steam in the usual way for about 4 -5 hours.
You can always substitute the dried fruit in your favourite Christmas pudding recipe for the apple, cherry and ginger mix, but remember to add a little more flour as the apple is quite wet.
