Serve this delicious summer salad with my Greek Kebabs or some crusty bread.

450g ripe tomatoes, cut into chunks
½ cucumber, halved, deseeded, cut into chunks
1 medium red onion peeled and thinly sliced
75g black olives
200g reduced fat feta cheese, cut into chunks
1 little gem lettuce cut into bite-size pieces
1 tsp dried oregano
1 tbsp olive oil
1 tbsp red wine vinegar
Salt and pepper
To make the dressing, whisk together the olive oil, red wine vinegar, salt, and pepper.
Combine the lettuce, tomatoes, cucumber, and onion in a large bowl, then add the olives. Pour over the dressing and toss gently.
Scatter over the feta cheese and sprinkle with dried oregano.
