Healthy Prawn Chow Mein

This Prawn Chow Mein tastes delicious. It is quick and easy to make and is much healthier than a takeaway version.

Ingredients

  • 250g Medium egg noodles (4 nests)
  • 1 tbsp sesame oil
  • 1 tsp groundnut oil
  • 2 garlic cloves, thinly sliced
  • 300g raw king prawns, peeled and deveined
  • 200g mangetout halved lengthways
  • 2 tbsp Shaoxing rice wine or dry sherry
  • 2 tbsp light soya sauce
  • 2 tbsp dark soya sauce
  • 4 spring onions, thinly shredded
  • 1 large carrot, peeled and cut into matchsticks
  • pepper

Instructions

  1. Cook the noodles according to the packet instructions, then drain and tip into a bowl. Pour over the sesame oil, tossing thoroughly to coat the noodles. Put aside.
  2. Heat a wok or large non-stick saute pan over a high heat, add the groundnut oil and stir-fry the garlic for 30 seconds.
  3. Add the prawns and stir-fry for 2 to 3 minutes until the prawns turn pink.
  4. Add the mangetout and mix.
  5. Add the rice wine and when it has almost evaporated, add the cooked noodles and toss well.
  6. Turn the heat down to medium and add the soya sauces and pepper. Stir-fry for 2 minutes.
  7. Serve garnish with spring onion and carrot.
