Lentil & Harissa Soup

This is a delicious soup that is quick and easy to prepare. Lentils are low GI and full of fibre which may help keep you fuller for longer.

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 1 large carrot, chopped
  • 1 stick of celery chopped
  • 2 garlic clove, crushed
  • 2 tbsp harissa paste
  • 200g red lentil, rinsed
  • 1 vegetable stock pot
  • 1 litre boiling water
  • 400g tin chopped tomatoes
  • Salt and black pepper
  • Chilli flakes to serve

Instructions

  1. Heat the oil in a large saucepan over a medium heat. Add the onion, carrot, and celery and cook over a medium heat for 5 minutes until softened. Add the garlic and cook for another minute.
  2. Add the lentils and harissa paste and mix until they are coated with the paste.
  3. Add the tomatoes, stock pot, and boiling water and simmer gently for 20 minutes with the lid on.
  4. Blend the soup using a hand blender and season with salt and pepper.
  5. Serve with a sprinkling of crushed chilli flakes
