Mince Pies with NO DRIED FRUIT!
They said it couldn’t be done…they were wrong.
I have developed this recipe for people who can’t digest dried fruit but it is also great for all those dried fruit haters. I will never understand you but I will make sure you can still be festive.
3 Bramley apples, peeled and coarsely grated
3 pieces of preserved ginger in syrup, coarsely chopped
1 cup glacé cherries, coarsely chopped (the processing breaks down the cherry skins so don’t worry)
Zest of 1 orange, finely grated
½ cup sweet sherry
2 1/3 cup dark brown soft sugar
1 teaspoon of ground cinnamon
1 teaspoon of ground mixed spice
½ teaspoon of ground cloves
1 teaspoon vanilla essence
3 drops of almond essence
3 tablespoons of brandy
50g shredded suet
Juice the lemon and add the coarsely grated apple (don’t worry if it browns), ginger and cherries.
In a large pan, dissolve the sugar in the sherry, add the ground spices and bring to a simmer.
Add the apple, cherry and ginger mix and simmer to reduce for about 15 minutes.
Bring off the heat and allow to cool a little.
Add the vanilla, almond, brandy and suet, and place into sterilised jars or make straight into mince pies in the usual way!
You can always use your normal mincemeat recipe, replacing the dried fruit with the same amount of apple, ginger and glacé cherry mix.
